This healthy breakfast pudding (can be breakfast/can be pudding) is super easy and enormously good for you. It also satisfies any sweet cravings you might have with one mighty swoop. How?
Ingredients
3 tablespoons chia seeds
200 ml coconut milk (rude health brand please)
3 - 5 dates
A handful of mixed frozen berries (redcurrants and blueberries here)
1 heaped teaspoon of cacao nibs
Method
1. Blend the coconut milk and dates until they form a smooth sweet milk.
2. Add the chia seeds and blend quickly (about 5 seconds).
3. Transfer the mixture into a bowl and leave to rest in the fridge for a minimum of 30 minutes, stirring half way to prevent clumping. This can be left overnight if you like (makes breakfast very easy!)
4. When you are ready to eat - stir the chia pudding, throw on the cacao nibs & frozen berries (leave the berries out on the counter for about 10 minutes prior to serving so as to partially-defrost them) and enjoy.
The breakfast pudding is dairy-free, artificial sugar-free, grain-free, paleo-friendly and vegan. It contains a portion of antioxidant rich berries, superfood cacao nibs, healthy fat in the form of coconut milk and all your essential amino acids from the chia seeds. TICK.
