oyster mushroom cerviche
2 tablespoons red onion, finely chopped
1/4 cup cherry tomatoes, peeled, seeded and diced
1/4 habanero pepper, seeds and ribs removed, minced
1/4 cup fresh squeezed orange juice, strained
2 tablespoons lime juice
pimch salt
1 cup oyster mushrooms, torn into thirds lengthwise
1/2 avocado
2 orange wedges for garnish
2 lime wedges for garnish
chopped cilatro (or even prettier, micro cilantro!)
In a bowl, mix the onion, tomatoes, habanero, orange juice, lime juice ad salt. Add the oysetr mushrooms and mix. Cover tighty with plastic wrap and refrigerate for 2 hours. Add avocado and mix carefully. Serve, garnished with orange wedges, lime wedges and cilantro.
