This pear celery soup is a good alternative to gazpacho in the heat of the summer, and can be 'pretty-ied' up using a handful of edible flowers, microgreens, juniper oil, fresh herbs and some foam. Foam is a great chef's trick - just over-blend some leftover soup until it becomes frothy and spoon carefully over the soup.
