One extraordinarily healthy meze plate. Substitute couscous from the classic tabouli recipe for hemp seeds to create an entirely grain-free, gluten-free, paleo-friendly alternative. Couscous is a processed white wheat flour product, aka, bad for you. Hemp seeds on the other hand, well where do I begin?

hemp tabouli

2 tablespoons hemp seeds

2 tablespoons olive oil

1 ½ tablespoons lemon juice

¼ teaspoon salt

½ cup cucumber, peeled, seeded and small diced

½ cup tomato, seeded and small diced

I spring onion, minced

1 cup parsley, chopped

Toss all ingredients until well combined. Adjust salt to taste.
