Kimchi is a fermented cabbage dish made with a mix of garlic, salt, vinegar, chile peppers, and other spices. It is rammed with vitamins A, B, and C and contains a huge number of “healthy bacteria” called lactobacilli which aid digestion and help ward off fungal infections. I took this poppingly healthy condiment, blended it with an asian-inspired cashew cream filling and then used the results to fill some bright green coriander coconut wrappers. A labour of love but worth every minute. Just.
